Snowdonia Cheese Company has announced the launch of Rock Star, its first vintage cave-aged Cheddar. Aged deep underground within Welsh slate caves in the heart of Snowdonia, Rock Star will be available to wholesalers, independents, delis and premium grocers from 1 September 2021.

Encased in bespoke cobalt-coloured wax to celebrate the rocks of the historical mines it’s aged in, Rock Star is set to become a Christmas favourite for family and friends to share – and will steal the show on any cheeseboard or cheese counter.

Fit for a celebration, this luxurious Cheddar has a deeper flavour and denser texture thanks to its time spent underground. Rock Star has a rich, savoury aroma and is incredibly smooth and irresistibly creamy with the occasional crunchy crystal. On the palate, complex umami flavours and sweet caramel notes lead to a long finish with a savoury tang.

To create Rock Star, the expert cheesemakers at Snowdonia Cheese explored North Wales for the perfect location for cheese maturation. They eventually found it: a former slate mine buried deep in remote mountains, surrounded by Snowdonia National Park and the protected Dark Sky Reserve. The caverns, 500ft underground, provided an exciting opportunity for Snowdonia Cheese Company to continue its pursuit of innovation close to its home.

Rock Star has credentials to be proud of even before it reaches these slate caves. Crafted by expert cheesemakers using a very special recipe and profile, only the finest cheese is selected to be transferred deep into the caves. Once there, it completes its 18-month maturation in sealed slate chambers for the optimum development of the Cheddar’s distinctive flavour and characteristics.
