Sushi Daily, Europe’s biggest fresh sushi kiosk business within supermarket stores, is launching a new recipe, The Cucumber Hearts Salad, as part of its CSR proposition to reduce food waste and raise funds for charity.

The new fresh side salad is made up of the inner parts of the cucumber with shichimi, sesame seeds and soy sauce. It’s the second menu item Sushi Daily has launched to help reduce food waste and support charity Action Against Hunger’s work alongside Forgotten Ends, which is a rice salad pot made up of sushi roll ends, which are often thrown away when sushi is rolled and cut. Both dishes retail at £2.05 offering consumers a low-cost sushi item made with fresh ingredients.

KellyDeli, the parent company of Sushi Daily, has been partnering with Action Against Hunger since October 2020 to help tackle hunger and malnutrition. Both Cucumber Hearts Salad and Forgotten Ends will support the company’s charity aims as, for every pot purchased, 20p will also be donated to fund a project.

The money raised from the Cucumber Hearts Salad will go towards a project in South Sudan, which is facing significant levels of flooding caused by climate change. Through this project, which sees rice growing in floodwater, South Sudanese communities will survive and thrive long into the future. Funds raised from Forgotten Ends are used to help tackle malnutrition in two of the worst-affected districts in Gujrat, India.

The company set out a target to donate €450,000 to AAH by 2023 and help save the lives of over 10,000 malnourished children. Reaching this target ahead of time, they set a new target to raise €1M by the end of 2025, and help save the lives of over 22,000 malnourished children, thanks in-part to the funds from the Forgotten Ends range.

The Cucumber Hearts Salad recipe was created by Sonam Choden Yadong, the partner who runs the Bilk-Kaufland’s kiosk in Dusseldorf, who was inspired by her culture and the company’s commitment to CSR.

Sonam said: “In the part of Asia where I am from, cucumbers are very popular and are served in many ways. We always use every part of the cucumber, but with sushi rolls this is difficult as the inner parts hold a lot of water and can spoil sushi rolls, which is why I came up with the Cucumber Hearts Salad, so that we can use the inner parts usually thrown away in the sushi crafting process and this way nothing goes to waste.”

We have redesigned our sushi trays to introduce 100% recycled PET and eliminate 48T of plastic each year, ensuring we still maintain the freshness and high-quality of our products.”

“We’re also running pilot schemes such as asking customers to bring their own reusable packaging to kiosks or using reusable packaging, which we are looking to roll out further this year. Our kiosks also sell reusable chopsticks and bento boxes to encourage re-use.”
