Lentils are really versatile and healthy. Yet so often people only think of using them for Indian cookery or think they lack flavour, when actually they are intrinsic in so many cuisines such as Italian and French. Think rabbit with brown lentils or guinea fowl on a bed of mixed lentils and stock. Compared to other types of dried beans, lentils are relatively quick and easy to prepare. They readily absorb flavours from other foods and seasonings, are high in nutritional value and fibre, low in fat, have a low GI and are available throughout the year.
Lentils are small but nutritionally mighty members of the legume family. They’re a superb source of cholesterol-lowering fibre and are of special benefit in managing blood-sugar disorders since their high fibre content prevents blood sugar levels from rising rapidly after a meal. Lentils also provide excellent amounts of seven important minerals, B-vitamins and protein, with virtually no fat.
KTC offers an extensive range of lentils, which can be cooked into tarka dal, vegetable moussaka, lentil bolognese or added to an array of salads. Choose from brown lentils, mung dal, chana dal, urid dal or red lentils and start experimenting with global flavours.
