Award winning French Bakery producer Bridor launched a number of new products at IFE last month, including Gourmandiz, a new range of flavoured pastry twists and Mini Paniers Salés, a new snack range inspired by Mediterranean cuisine.

Of particular interest were three newproducts that reflect the growing demand for Asian flavours: a Green Tea & Cranberry swirl and a Lychee swirl, which are part of the Arc en Ciel collection and a Yuzu mini choux from the new Paris B collection.  All have been developed in partnership with renowned Parisian bakery and patisserie, Lenôtre.

For Spring/Summer, inspired by the traditional Paris Brest, but taking in flavours of the world, this new collection consists of flavoured light butter mousse inside a puff pastry shell with a colourful crumble topping.

Six flavours are ready to take you on a sensory journey: BREST has a hazelnut-almond praline, NEW YORK with its cream cheese and caramelised macadamia nut pieces, MONTREAL with its cranberries,TOKYO with its Yuzu juice, ZANZIBAR made with Passy Cacao Barry chocolate mousse and finally DEAUVILLE with its salted butter caramel.

The Arc en Ciel (translated as Rainbow) six piece collection is made with all butter croissant dough, and generously filled with naturally flavoured custards.   Flavours include Matcha Green Tea and Cranberries, Menton Lemon (frangipane and candied citrus), Praline and Hazelnut, Chestnut Crème, Marmalade and Lychee.
