Adande® has supplied two refrigerated double drawer systems to Slattery, a Manchester based pâtissier and chocolatier. Established in 1967, Slattery produces a range of speciality pastries, chocolates, ice creams and celebration cakes. In addition to over the counter trade, the Slattery operation includes a 140 seat dining room, offering breakfast, lunch and afternoon tea. The menu includes freshly prepared sandwiches, baguettes, salads and bistro lunches, as well as confectionery delicacies, prepared on the premises. The dining room serves over 2,000 covers per week, catering for the local business community, shoppers, families and party functions.
Located in the dining room’s busy kitchen, one of the Adande® drawer units is used for the storage of raw ingredients, whilst the other is used for holding cooked product, including meat and fish, avoiding cross contamination between raw and cooked food. The drawer units are located beneath the kitchen’s food preparation worktops, providing convenient and space saving temperature controlled storage, eliminating the need for staff to leave the workstation to fetch ingredients.
The unique and patented Adande® refrigerated systems feature insulated drawers and an innovative modified air flow pattern, which deliver high efficiency cooling, as well as accurate and stable temperature control, no matter how frequently the drawer is opened, even in the hottest kitchen environments.
Slattery’s Managing Director, John Slattery, reported that he had seen the Adande® system demonstrated at a trade show and recognised the advantages compared with upright refrigeration equipment. As a result, he specified the drawer units to his contractor, as part of a recent kitchen refurbishment. He added that despite frequent access to the drawers, in the busy and hot kitchen environment, the units’ inherent temperature stability and fully insulated drawers made them economic to run.
Mr Slattery also cited hygiene as an important issue: “The robust sliding mechanisms and fully demountable drawers simplify our stringent cleaning regimes. The castor mounted units are easily moved, facilitating access to the floor space beneath the food preparation stations, for regular and thorough cleaning.”
