With a time-honoured recipe perfected over decades, Di Marco’s signature dough is crafted from a proprietary blend of wheat, soy, and rice flours, along with their revered mother dough—a secret formula that has set the benchmark for authentic Pinsa.

Invented in 2001 by master baker Corrado Di Marco, Pinsa is distinguished by its characteristic oval shape, an extensive 72-hour leavening process, and its uniquely light and airy texture. Thanks to a high-hydration dough, Pinsa achieves the perfect balance of a crisp, golden crust with a soft, delicate interior.

As a third-generation family business, Di Marco remains committed to tradition and quality, producing their handcrafted Pinsa bases in their Rome-based factory. At the age of 79 Corrado Di Marco is still working in the business every day alongside his sons Alberto and Enrico.

In 2024 alone, they crafted 25 million Pinsa using their original recipe, upholding the highest standards of artisanal excellence. The company operates with a zero-waste, clean-energy ethos, using only premium ingredients that are entirely free from preservatives.
