Food on The Move is big business for multiple grocery retailers, and a huge profit opportunity. John Wannan, sales and marketing manager, Moffat Catering Equipment, takes a bite at the key product categories in this crucial area of the grocery market.

The Grab & Go sector is on an upward trend as food-to-go venues look to find ways to provide efficient service for large volumes of customers in a short time.

Food-to-go venues are often short of space front-of-house, so operators are increasingly looking for ways to offer a range of tasty Grab & Go menu items on a small footprint. As well as being compact, the display equipment needs to hold foods at safe temperatures, without deterioration, and show it off to its best advantage.

In response to customer demands, Moffat launched its MHC Grab & Go food merchandiser which innovatively combines hot and cold display in the one slimline unit. It’s ideal for keeping sandwiches, drinks and salads perfectly chilled, whilst keeping hot snacks such as pasties and sausage rolls at the ideal serving temperature.

It is said that customers taste with their eyes before their mouths so it is important to display food attractively. A clean, brightly lit, modern food display unit represents an establishment that cares about its customers and it will encourage sales. The design of the counter needs to promote hygiene and maintain food safety and quality through, for example, consistent temperature, in both heated and chilled food units, throughout the duration of service.

When food is held in heated displays, customers may worry that the items will be soggy or will have dried out. Moffat has developed a special circulating air system for its heated Grab & Go displays that gently warms the product – so pastries stay hot and fresh for longer.

It is essential that Grab & Go units are easy to re-stock. The Moffat heated merchandisers feature rear doors allowing easy access for staff to re-stock the display area – they are sliding rather than hinged, to avoid blocking walkways when opened.
