Lentils are really versatile and healthy. Yet so often people only think of using them for Indian cookery or think they lack flavour, when actually they are intrinsic in so many cuisines such as Italian and French. Think rabbit with brown lentils or guinea fowl on a bed of mixed lentils and stock. Compared to other types of dried beans, lentils are relatively quick and easy to prepare.
