Swiss cheese specialists Emmi have teamed up with Eric Lanlard, the star of Channel 4’s Glamour Puds, to create a stunning wedding cake made entirely from cheese.
The five-tiered masterpiece features whole wheels taken from Emmi’s portfolio of award-winning cheeses, including the Tête De Moine top, which also provides the delicate rosettes used to decorate the cheese wedding cake. This mild, hard cheese is ‘shaved’ using a traditional Girolle to create the pretty florets.
The rest of the ‘cake’ was made up from the following:
• Second tier: Val Poschiavo
• Third tier: Piz Bever
• Fourth tier: Appenzeller surchoix
• Bottom tier: Berner Alpkase
The master pâtissier admits that despite his reputation for inspirational cakes and A-List clientele, he doesn’t actually have a sweet tooth “This is a great alternative to a classic wedding cake, and the Tête de Moine rosettes are beautiful as a decoration,” says Eric. “I wouldn’t recommend them for a bouquet, though – the guests might not be too happy when the bride throws it.”
